Grilled Vegetables in Foil Packets

I can’t count the number of times we’ve made vegetable packets. The best part is that you can tailor each person’s packet to the vegetable mix they enjoy most.


  • Zucchini, sliced
  • Yellow squash, sliced
  • Green pepper, sliced or cubed
  • Red pepper, sliced or cubed
  • Onion, halved and sliced
  • Broccoli florets
  • 1/4 cup olive oil
  • 1/4 cup melted butter
  • 1 Tbsp Italian seasoning
  • 3 Tbsp lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste


  • Preheat grill to medium heat
  • Create foil packets and add vegetables
  • Combine all dressing ingredients, drizzle over vegetables
  • Seal packets and grill 30 minutes, turning packets once

Eric’s Chicken

This recipe is a regular in our household. Great as an entree, or grill up a batch to use throughout the week in salads, wraps and quesadillas.


  • 1/2 cup Italian dressing
  • 1/2 cup teriyaki sauce
  • 2 cloves minced garlic
  • 4-6 boneless, skinless chicken breasts


  • In a bag or bowl, combine Italian dressing, teriyaki sauce and minced garlic
  • Add chicken breast halves; cover and marinate in the refrigerator (overnight if possible)
  • Grill approximately 10 minutes per side until chicken is fully cooked and juices run clear

Greek Chicken and Vegetables

A quick and easy recipe originally from the Reynolds Kitchen that can be made on the grill or in the oven. And the foil packets make clean-up a breeze!


  • Aluminum foil (4 sheets)
  • 4 boneless, skinless chicken breasts
  • 2 cups fresh or frozen cut green beans (or 5-oz can drained)
  • 14.5 oz can diced tomatoes with garlic and onion
  • 2 tsp dried oregano
  • 1 tsp salt
  • 1/4 tsp pepper
  • 4 oz crumbled feta cheese


  • Preheat oven to 450° or grill to medium high
  • Cut chicken into strips
  • Combine chicken, beans, tomatoes and spices
  • Center 1/4 of chicken mixture on each sheet of foil and fold into packet, leaving room for heat to circulate inside
  • Bake 20-24 minutes on cookie sheet or grill 10-14 minutes in covered grill
  • Sprinkle with feta cheese before serving
