Bruschetta Stuffing Bake

I got this recipe from the back of a Stove Top Stuffing box, and it was surprisingly delicious.


  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 package (6 oz) Stove Top Stuffing mix for chicken
  • 1/2 cup water
  • 2 cloves garlic, minced
  • 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tsp dried basil leaves or Italian seasonings
  • 1 cup shredded mozzarella cheese


  • Preheat oven to 400°
  • Mix stuffing, tomatoes, water and garlic in a bowl until stuffing is just moistened
  • Place chicken in 3-quart casserole sprayed with cooking spray
  • Sprinkle basil over chicken followed by layer of cheese
  • Top with stuffing mixture
  • Bake 30 minutes or until chicken is fully cooked
